I spent this weekend in Nacogdoches to celebrate my friend Katie's birthday with her family. She's also a dietetic intern in my class, and she's also... VEGAN! Which is pretty rare and cool, even in the nutrition community. It's definitely a rare occasion that there are two vegan interns in one dietetic internship class, which we are very stoked about as you can imagine!
We stayed in an adorable vacation rental home on a ninety-acres property.
There was a zip line course, duck and fish ponds, and hiking trails.
I passed on zipping this time, perhaps another time!
It was neat to see that there were duck eggs in nests in the little floating house. Ducklings will be expected this Spring!
GREEN in the background! What a privilege! (Excuse my excitement, I grew up in a desert OK?)
The house was just so cute with so much character. I mean look at this super cute reading nook! You know where to find me!
They had the entire Chronicles of Narnia!
If you look all the way at the back of this picture, you'll find my favorite thing about this house, the "conversation swing." You can move the backs of the seats to either face in the same or opposite direction! I thought it was the neatest thing, especially romantic for couples.
Sitting out here makes me wish I had a porch. And of course some rocking chairs!
If you're asking "Where's the food?!"
Don't worry, don't worry how can I forget about the food!
I just found out about vegan marshmallows a few weeks ago, 'cause quite frankly, I never cared much for marshmallows. But... it's definitely a good thing that they exist so no one has to miss out on s'mores, ever! (or homemade rice krispie treats for that matter! I sense a new recipe coming on...)
After your marshmallow is roasted (or burnt... oops), sandwich it between some graham crackers and dark chocolate! And now you've got your vegan s'more! And if you don't have time to make a campfire, just stack up the ingredients and pop it in the microwave for 15 seconds. It really works!
Who says vegans can't eat anything?
And ending this trip on a high note is my personal highlight of this place... the magical Jessi's Lane.
