Last week, I've been thinking "oh my gosh what am I going to bring to school to eat?" This task has been so intuitive in the past. I'n used to people I went to school with and worked with at Texas Tech looking over to see and ask what I'm eating. I enjoy their curiosity actually. And of course, I'm always eager to tell them all the things I brought to school for lunch and snacks. But since I've been out of school and mostly at home for 3 months now, I've had the pleasure of eating what I want, when I want. No need to think about packing, carrying, refrigerating, or heating up my food. I absolutely love having this pleasure! But as you know, I will be continuing my education here in Houston, and so it's time to come up with on-the-go breakfast and lunch ideas again!
In the morning, I quickly whipped up this big smoothie to take with me, and I have to say, it really did it! I mean, it really filled me up! I would sip (more like gulp) from it during my orientation sessions throughout the morning. By noon, I honestly couldn't even finish it. That's how full I was. I'm so excited to share this fiber rich, antioxidant rich, water rich smoothie recipe with you!
- 3 big handfuls of spinach
- 1 1/2 cups frozen organic mixed berries
- 2 ripe bananas
- 2 cups water
Blend it all up!
As a tip: I thaw portions of my frozen berries and fruit out in cups in the fridge before I use them in smoothies. I do this so that my smoothies aren't FREEZING and harsh for my throat. On the other hand, if you are a person that likes thick and extra cold smoothies, then go ahead and blend the berries frozen. If your smoothie is too thick, just add some more water to thin it out. The opposite of course is true as well if you like them thicker!
