Guess I can't complain here in my warm Texas winters. I don't have it bad at all even though it is January. So thankful!
I've made banana soy smoothies many many times before, but this is the first time I use coconut milk instead. Here are the only ingredients you'll need.
I'm quite happy because this made exactly the perfect amount to fit 2 of my new stemless wine glasses! As you can see they are nice and big, so this is a perfect portion.
- pour 3 cups of unsweetened coconut milk into blender (if using Vitamix, measurements are shown on side of blender)
- break bananas in half and place in blender
- add cinnamon and blend until smooth and frothy
- serve and top with coconut flakes and more cinnamon
