Hey there health seekers,
It's me, Roxxi Li, Registered Dietitian-in-training! I was born and raised in China, where I was fortunate enough to have lived most of my early childhood. Then I enjoyed the rest of my childhood and teenage years in El Paso, TX where you'll find just the friendliest of people. I completed my undergrad in Nutritional Sciences & Dietetics at Texas Tech University and now I'm here as a dietetic intern and grad student in Houston, TX!
My journey with food and self-seeking has been a long and adventurous one. I went vegetarian overnight as a rebellious 13-year-old middle school-er who have always immensely loved everything about animals. A full version of my vegan story is coming soon! Eventually, I found myself adopting a whole foods, plant-based, vegan diet and lifestyle, of which I feel passionate to share.
It is in my hopes that this website will be a place of fun, comfort, knowledge, and motivation for anyone out there, whether you're vegan, non-vegan, veg-curious, skeptical, or any combination of the above!
